Butternut Squash Purée

1 lb Butternut Squash
diced
3 tbsp Cream
1 tbsp Cooking Liquid
1/4 tsp Sugar
1 oz Butter
1/2 tbsp Salt

Place squash in a pot and cover with water and bring to a boil and simmer till tender. Once cooked through, strain off liquid and reserve a little for the purée.

Place all the ingredients with butternut squash in a Cuisinart and pulse until smooth. Strain through a double mesh strainer and adjust seasoning.
