10 whole boneless skinless chicken breasts
1/2 cup olive oil
1 cup white wine vinegar
fresh Italian parsley

1 cup prunes
1 cup green olives
1/4 cup capers
1 bottle
8 cloves garlic

A really unique Mediterranean chicken dish that feels fancy but is so simple to make. Put all the ingredients in, marinate, and bake while you have a glass of wine with your dinner guests! It sounds weird but the prunes end up being the most delicious part.
Marinate chicken for several hours (can be marinated overnight, but the vinegar will make the chicken drier over time) with the olive oil, vinegar, parsley, prunes, olives, capers, garlic, salt, pepper, and oregano.
Preheat oven to 350°F. Lay chicken in baking dish; pour marinade over. Add 1 cup white wine and sprinkle chicken with brown sugar. Bake for 1 hour.
