press cookies
1 lb butter
1 1/2 cups sugar
6 whole egg yolks
1 tbsp vanilla flavoring
4 1/2 cups flour
  • electric mixer
  • cookie press
  • baking sheet
I especially like to make the butter cookies to give to all my neighbors at Christmas time. Sometimes when I do not have time to make them I buy the butter cookies in the big tin at Costco. My grandchildren tell me that the Costco ones taste OK but they are not as good as mine. When I make the cookies, they disappear very quickly. Everyone loves them.
In a mixer, cream butter to soften.
Add the sugar and stir well with the butter.
Add the egg yolks, a couple at a time, mixing well.
Add the vanilla.
Add the flour, a cup at a time so it mixes well. The batter will be a little soft but it will go through the press easier.
Push dough through cookie press. (I use a smaller saw-like shape to make a very delicate cookie.)
Bake the dough at 350°F. Be sure to watch carefully. As soon as you see a slight brown edge on the cookie (may only show brownness on one or two cookies), take cookies out and cool on a rack. If you allow the cookie to become totally brown, the butter has burned and the cookies are not very tasty.
