charlie's buckwheat groats

charlie\'s buckwheat groats
2 tbsp safflower oil
olive oil, corn or vegetable oil will all do fine
1 cup whole buckwheat groats
roasted or raw will do (any health food store or bulk food store will have them)
1 whole egg
1 tsp salt
2 cups water

Growing up, my Dad was often in charge of breakfast on school days. This was one we looked forward to. Now, I make it for my kids and it's still a favorite. Easy, quick and healthy.
Heat oil in a heavy skillet, then stir in buckwheat groats mixed with the beaten whole egg.
Add the salt and brown slightly for a minute or two, keeping the mixture stirred with a wooden spoon.
Finally, add the water. Bring it to a boil, then reduce the heat, cover tightly and let simmer until all the liquid is absorbed, about 8-10 minutes. It shouldn't be mushy--every grain should be separate and just slightly chewy.
