German-style fried chicken served with an Asian-style dipping sauce is a marriage of flavors sure to delight.
|For the Sauce|
|Mix 3 cups water with a small handful of bonito and a 2- to 3-inch square of kombu. Bring to boil. Add garlic, grated ginger and about 1/2 cup soy sauce until color is reddish brown. Add about 3/4 cup sugar and a little salt. The sauce should be sweet. Let it simmer and then strain into individual dippingbowls.|
|For the Breading|
|Combine flour and corn starch (about 85% to 15%). Sprinkle with water until it becomes a little gooey. Put into a brown paper bag.|
|Cut 2-3 chicken breasts into 2-inch pieces and put into bag with flour mixture. Shake until chicken is thoroughly coated.|
|Heat oil (about 2 inches high) in a deep skillet or wok. Put coated chicken into the skillet and fry until brown and crispy. Drain on paper towels or brown bag paper.|
|Dip hot chicken into sauce and enjoy with rice.|
