ingredients
all
8 whole roma tomatoes
1 whole red onion
medium size--peeled and cut into quarters
2 whole lemons
juiced
1 tbsp garlic chili sauce
1 tsp salt
1 tbsp minced/crushed garlic
5 whole chipotle peppers in adobo sauce
you may replace chipotle peppers with whole pickled jalapeños
1 bunch cilantro
you may adjust quantity to 1/2 bunch depending on your taste for cilantro

This is the salsa that I bring to work that earns the "ooooh's" and "aaaaaah's" of the PBNC staff. A regular staple at the office! (Who's buying the chips this time?)

Roast tomatoes and onion at 350°F for 5 minutes. This can be done in the oven or toaster oven.

To a blender, add juice squeezed from the lemons, garlic chili sauce, salt, garlic, peppers and tomatoes. Blend to your desired consistency. Try 30 seconds on medium to start.

Add onion and cilantro. Blend for another 45 seconds on medium.

Experiment with the amount of peppers for heat and the blending time for consistency.
