ingredients
all
4 cloves garlic
lightly pounded
2 inches ginger
peeled and lightly pounded
1/2 whole yellow onion
1 tbsp canola oil
2 1/2 lbs bone-in skinless chicken thighs
or drumsticks, skinless is optional
fresh ground black pepper
1/2 cup kikkoman soy sauce
20 oz coca-cola
have extra on hand
green onions
chopped, optional

This is one of my go-to dishes for tasty, fall-off-the-bone chicken with a Chinese flair! It's comfort food and easy to make even in large portions. This was one of the first dishes I made for my husband, Jason. He revealed much later that he hates yellow onion and meat on the bone. Oooops! Now, when I make it for him, I use boneless chicken thighs and no onions. If you have someone at home with similar aversions, feel free to adjust the recipe!

In a sauté pan, brown garlic, ginger and onion in canola oil.

Add chicken thighs and brown on both sides until golden brown.

Transfer chicken, garlic, ginger, and onions to a sauce pan.

Add a generous amount of fresh ground black pepper.

Add soy sauce.

Slowly add Coca-Cola.

Bring to a boil and then simmer on medium heat for about 1 hour, stirring occasionally so all sides of all the pieces of chicken have a chance to be immersed in the liquid. If liquid gets too low, add more Coca-Cola. If it's not salty enough to your taste, add a little more soy sauce.

Sprinkle with green onions. Serve over rice!
