bacon kimchi fried rice
ingredients
all
8 slices bacon
sliced into 1-cm pieces
4 cups cooked rice
old and cold
2 cups canned corn
3/4 cup kimchi
roughly chopped
2 tbsp kimchi juice
from your jar of kimchi
2 whole eggs
or more as desired

Cook the bacon until crisp. Remove and put in a separate bowl.

If you’re concerned about how much fat you consume, remove the bacon fat from the wok. Otherwise, add the rice and fry it, stirring occasionally until all the clumps are broken down and the rice is heated, about five minutes.

Add the bacon and corn and fry until all ingredients are mixed throughout the rice.

Add the chopped kimchi and kimchi liquid, mixing thoroughly.

Either use a separate smaller pan to fry the eggs or transfer the kimchi fried rice to a separate bowl and use the remaining fat or add oil to fry the eggs sunny-side up.

Top each plate of kimchi fried rice with a fried egg.

Serve immediately.
