2 cups pasta
best with corkscrew or shell
1 cup cherry tomatoes
cut in half
3 tbsp olive oil
1/4 stick butter
1/3 cup whole milk
1/3 cup Parmesan cheese
grated
cooked chicken
optional, omit for vegetarian
pepper

I've been a long time supporter of PBNC. This photo is of my son, Rusty, at his very first PBNC vision screening. He was so excited, he couldn't sit still! This pasta recipe is one of his favorites.

Boil pasta (best with corkscrew or shell pasta).

Measure about 1 cup of cherry tomatoes and cut each tomato in half.

In a medium sauce pan, over medium heat, add 3 tbsp of olive oil. Once hot, add cut tomatoes. Once tomatoes have broken down about half way (about 5 mins), pour into a separate bowl and set aside.

In the same medium sauce pan (you can wipe it clean), melt 1/4 stick of butter over low-medium heat.

Once butter is melted, turn stove to low, add 1/3 cup of whole milk, and add 1/3 cup of grated Parmesan cheese and stir until cheese is mixed in.

Once incorporated, add cooked tomato mixture (you can also add cooked chicken if you want). While pan is still on low heat, add cooked pasta to sauce pan and mix.

Scoop into bowls and enjoy! Adults add pepper as desired!
