1 lb button mushrooms
large
1/2 cups breadcrumbs
1/2 cup parmesan cheese
grated
1 whole egg
1 tsp garlic
minced
salt
to taste
ground pepper
to taste
extra virgin olive oil
as needed

We sure love our stuffed mushrooms at PBNC! Here's another version of our beloved mushrooms.

Preheat the oven to 400°F.

Clean mushrooms, remove stems, and scoop out some of the cap with a spoon. Be careful to leave the caps intact.

Chop the stems, combine them in a bowl with the bread crumbs, cheese, egg, garlic, salt, pepper.

Add enough olive oil to help the mixture somewhat stick together.

Stuff the mushroom caps with the mixture. Avoid over-stuffing the caps. Place on lightly greased baking sheet.

Bake for 15 minutes, or until mixture is lightly browned on top. Remove from oven, let cool a bit, and enjoy!
