sweet potato with honey & cream
6 whole sweet potatoes
about 3 1/2 ounces each
3/4 cup whipping cream
35% fat
5 tsp sugar
1/3 cup honey
Made with whole ingredients and just a touch of sugar, this dessert is delicious and comforting! The sweet potato soaks up the honey and the whipped cream adds just a touch of richness to each bite.
Preheat the oven to 350°F. Roast the sweet potatoes on a baking sheet or roasting pan for 40 minutes or until they are crisp on the outside and tender in the middle.
After the potatoes have been baking for 30 minutes, prepare the cream by combining the cream and the sugar in a large bowl. Whip the cream until soft peaks form.
Cut the sweet potatoes in half lengthwise and arrange them on a serving plate cut-side up. (They will be hot!)
Drizzle the honey on the sweet potatoes.
Serve with a dollop of the whipped cream.
