1 | Preheat the oven to 350°F. Roast the sweet potatoes on a baking sheet or roasting pan for 40 minutes or until they are crisp on the outside and tender in the middle. |
2 | After the potatoes have been baking for 30 minutes, prepare the cream by combining the cream and the sugar in a large bowl. Whip the cream until soft peaks form. |
3 | Cut the sweet potatoes in half lengthwise and arrange them on a serving plate cut-side up. (They will be hot!) |
4 | Drizzle the honey on the sweet potatoes. |
5 | Serve with a dollop of the whipped cream. |
