1/4 cup heavy cream
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 1/2 tsp red wine vinegar
8 cups young Boston lettuce
loosely packed, washed and dried
This salad is super easy to make and super tasty. Jacques Pepin's mother used to whip up this cream dressing for salads while he was growing up. Toss with the greens with the dressing at the very last minute for best results. This dressing is the same base used for the poached tilapia with cream sauce recipe.
Just before serving, put the cream, salt, and pepper in a salad bowl and whip with a whisk for about 15 seconds, or just until frothy.
Pour in the vinegar and whisk again.
Add the lettuce, toss briefly, and serve immediately.

If the dressing gets too thick after whipping in the vinegar, dilute with some water before adding the lettuce.
