French fries simply aren't as glorious as they were the moment they were freshly served. However, they are still worth saving! If you ever have leftover French fries on hand, this recipe is a quick and easy way to turn them into an delicious, casual brunch.

Reheat the french fries in the non-stick skillet until they are warm and crisp.

Add a pinch of salt and pepper to the eggs, beat them, and then pour them over the fries. Use chopsticks to gently scramble the eggs in between the fries.

When the torta looks solid enough to flip, invert it with the flick of your wrist or with the help of a plate or pot lid.

Cook the other side for 1-2 minutes, then glide the torta onto a cutting board. Slice into triangles. Share and enjoy!
