sweet and salty chex mix

ingredients

2 cups honey nut cheerios
2 cups honey comb cereal
2 cups cheez-it
2 cups captain crunch cereal
2 cups japanese sesame sticks
can be found at Trader Joe's
2 cups honey sesame sticks
can be found at Trader Joe's
3 cups corn chex cereal
could also use life cereal
3 cups wheat chex
4 tbsp light corn syrup
4 tbsp dark brown sugar
2 tbsp butter
2 tsp vanilla
3 cups cashews
Costco's Kirkland brand
2 cups japanese peanut crackers
can be found at Trader Joe's
2 cups synder's butter snaps
can be found at Pavillions

Preheat the oven to 275°F. Line 2 large jelly roll pans with parchment paper.

Combine the butter snaps, honey nut cheerios, honey comb cereal, cheez-its, captain crunch, and both sesame sticks into a large mixing bowl and stir. Then top with the chex, but keep the chex on top of the mixture. Reserve the cashews and japanese peanut crackers; those will be added towards the end.

In the non-stick saucepan, heat the corn syrup, brown sugar, and butter over medium heat until bubbly. Stir occasionally. Simmer for 1-2 minutes after bubbling. Add the vanilla off heat.

Pour the butter mixture over the chex layer stirring thoroughly. Always mix in thirds. Transfer the mix to the pans and spread evenly. Bake for 30-40 minutes, stirring every 10 minutes.

Pull the mix out of the oven and allow to cool completely.

When cooled, add the cashews and peanut crackers. Store in an airtight container.
