Carm stumbled upon this tasty, easy to make dish while watching the Food Network. This dish is always a great hit at parties.
Cook pasta to al dente, with a bite to it, then run it under cold water in a colander to stop the cooking process. Drain the pasta very well.
At the bottom of a large bowl, whisk together the soy sauce, peanut butter, vinegar, oil, sesame oil, and hot sauce.
Add noodles and veggies and toss to combine until the noodles are evenly coated with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.
