roy choi\'s cobb salad
ingredients
all
1 cup extra virgin olive oil
1/2 cup cider vinegar
1/4 cup capers
packed in either salt or brine
2 tbsp onion
minced
2 tbsp fresh parsley
chopped
2 tbsp scallions
minced
salt and freshly ground black pepper
to taste
big bowl of mixed greens
such as baby romaine
1/2 cup crumbled blue cheese
2 cups cooked turkey
diced
1/2 cup cucumber
diced, peeled and seeded
1/2 cup tomato
diced
1/2 cup hard-boiled egg
diced
1/2 cup cooked bacon
diced
1/2 cup scallions
minced
1/2 cup cheddar cheese
diced
1/2 cup deep-fried shallots
store-bought fried onion strings are fine

The dressing for this salad is simply perfect! We like the specific combination of ingredients for this salad, and especially appreciate that it includes two types of cheese. :)

For the dressing, process the olive oil, vinegar, capers, onion, parsley, scallions, salt, and pepper in a magic bullet or equivalent.

Toss the mixed greens with the dressing. (Don't feel compelled to use all the dressing with the greens. Just add enough to coat the greens. You can repurpose any extra dressing for other salads or blanched veggies.) Transfer the greens onto the serving plate.

Arrange the rest of the ingredients over the greens. Share and enjoy!
