cook's illustrated avocado salad with apple and endive

ingredients
all
1 tsp shallot
minced
1/4 tsp honey
1 tbsp cider vinegar
1/4 tsp mayonnaise
1 tbsp olive oil
salt and pepper
1 whole avocado
1 half Fuji apple
cut into 1-inch matchsticks
1 head endive
thinly sliced
2 tbsp chives
minced
3 oz blue cheese

Combine the shallot, honey, vinegar, and mayo in a small glass measuring cup.

Drizzle in the olive oil and whisk it in. Season the dressing to taste with salt and pepper.

Toss the avocado with half of the dressing then transfer to serving plates.

Toss the apple, endive, and chives with the rest of the dressing and spoon it over the avocado.

Top with blue cheese and serve immediately.
