jacques pepin\'s asian savoy cabbage salad
2 tbsp rice vinegar
1 1/2 tbsp dark soy sauce
1 tbsp oyster sauce
use oyster sauce substitute for vegan
1/2 tsp tabasco
1 tsp sugar
3 cloves garlic
crushed and finely chopped, about 2 teaspoons
2 tbsp sesame oil
8 oz savoy cabbage
tough lower part of central ribs removed and discarded, leaves finely shredded, about 6 cups
1/2 cup carrots
julienned into 2-inch long matchsticks

This is a colorful and tasty side dish that pairs well with Asian dishes such as Chinese BBQ pork and Peking chicken. While it requires a little bit of lead time, clean up and prep is really easy.
Combine all the dressing ingredients in a plastic bag large enough to hold the cabbage.
Add the cabbage and toss it with the dressing. Allow the mixture to macerate for at least 2 hours in the refrigerator.
Transfer the salad and dressing to a serving bowl. Sprinkle with the carrots and serve.
