caramel corn

ingredients
all
8 qt popped corn
2 cups light brown sugar
1/2 cup light corn syrup
1/4 cup margarine
1/4 tsp cream of tartar
1/4 tsp salt
1 tsp baking soda

This is our Grandma Eleanor's recipe. If you don't own an oversized roasting pan, you can use rimmed baking sheets on each oven rack.

Preheat oven to 200°F.

Place popped corn in oversized roasting pan.

In a 2 1/2 quart saucepan, combine the next 5 ingredients and bring to a boil over medium heat, stirring constantly with a large spoon. Bring temperature up to 200°F or until mixture forms a ball when drizzled with hot water.

Remove from heat, rapidly stir in baking soda, and pour onto popcorn while stirring. Bake at 200°F for one hour, stirring occasionally.
