Roasted Carrots with Sesame

ingredients
all
1 bunch chantanay carrots
or other preferred bunched carrots
2 tbsp LMM olive oil
salt and black pepper
2 tbsp LMM tahini
1/2 bunch parsley
1 whole lemon
zested and juiced
salt
to taste

Preheat oven to 375°F.

Clean tops off carrots and peel.

Toss with olive oil, salt, black pepper, and transfer to baking sheet to roast until gently tender, about 20 minutes.

In a medium mixing bowl, add chopped parsley, lemon zest (use a Microplane zester), lemon juice (strain through a strainer), roasted carrots, and tahini.

Taste and add salt as necessary.
