Carrot Ginger Soup

olive oil
2 bunches orange carrots
1 whole yellow onion
3 cloves garlic
1 knob ginger
salt
black pepper
1 qt vegetable stock
crème fraîche
optional - exclude for vegan version
cilantro
for garnish

This soup is bright in color and flavor--the beautiful orange from the carrot, the sharpness of the ginger. This is also the basic method for soups, easily adaptable to other vegetables.

Peel and cut the carrots in large pieces.

Peel and chop the onion, ginger, and garlic and keep separate from the carrots.

In a large pot, add olive oil and carrots. Cook for about five minutes.

Add onion, garlic, and ginger. Season with salt and black pepper.

When the vegetables start to brown add the vegetable stock. Cook until the carrots are soft, about 20 minutes. Time to blend!

In your blender add the soup in batches, then pass through a chinoise to get the best textured soup.

Season with salt and black pepper. For a little extra richness add a few spoonfuls of crème fraîche and top with chopped cilantro.
