Mexican Winter Greens Salad

ingredients
all
2 tbsp reserved orange juice
1 Tbsp red wine vinegar
1 tsp honey
2 Tbsp extra-virgin olive oil
2 Tbsp chopped fresh oregano (or cilantro)
Kosher salt and black pepper to taste
1 head butter lettuce
2 each large heads frisee
1/2 each red onion
shaved & soaked in ice water
5 each radishes
shaved & soaked in ice water
2 each medium beets
cooked
1 each jicama
peeled and julienned on mandoline
2 each apples
cored and julienned
1 each avocado
diced
1/4 cup pumpkin seeds
toasted
2 each oranges
supremed
1 cup queso fresco
crumbled or shredded
cookware
To Assemble the Salad

Whisk all the dressing ingredients together and adjust flavors as desired.

Wash and dry the lettuces. Cut the frisee into small fronds and the butter lettuce into bite-sized pieces. Drain and pat dry the onion and radish.

Lightly season and dress the beets, jicama, apple, onion, and radish. Arrange on a platter and garnish with the orange, avocado, pumpkin seeds and queso fresco.
