Cashew Cream

ingredients

1 cup raw cashews
soaked 2 hours
2 Tbs maple syrup
1/2 tsp vanilla extract
1 vanilla bean
split and with the seeds scraped out
1/4 tsp sea salt
1/4 cup water

The cashew cream is a creamy, protein rich, and dairy-free alternative to whipped cream.

Drain and rinse the cashews and add to the blender. Add maple syrup, vanilla extract, vanilla bean seeds, and salt.

While blending, add water, 1 Tbs at a time, until the consistency is thick like a whipped cream.

Taste and adjust flavors if necessary, store in the refrigerator until ready to use.
