Pickled Green Beans

1/8 tsp dill seed
per jar
1/8 tsp mustard seeds
per jar
1/8 tsp crushed red pepper flakes
per jar
2 cloves garlic
1 lb green beans
trimmed
1 1/4 cup water
1 1/4 cup champagne vinegar
2 Tbs salt

These quick pickles make a delicious salad topping, unusual addition to a crudite plate, or simply a tasty snack. After the beans are gone, try using the brine in place of vinegar in salad dressings or marinades.

Layer spices, garlic, and beans in a clean glass quart jar.

Bring water, vinegar, and salt to boil. Pour hot brine over beans.

Place lid on jar and bring to room temperature. Place in the refrigerator and allow to pickle for a minimum of one week. Serve.
