Spring Blueberry Apricot Thyme Gelatin Jam

1 tsp gelatin
1/2 cup water
divided
1/2 lb blueberries
1/4 lb apricots
pitted and diced
1/4 cup honey
3/4 Tbs lemon juice
to taste
1 tsp thyme leaves
roughly chopped

Good quality gelatin from grass-fed cows is highly nourishing. Gelatin supports healthy joints, skin, and digestion with lots of amino acids and some protein. Typically jellies are made from juice, but this version incorporates the fiber-rich flesh of the fruit.

Dissolve gelatin in 1/4 cup of the water. Set aside.

Add remaining ingredients to a small saucepan. Bring the mixture to a boil over medium-high heat, mashing the fruit as it cooks, about 5 minutes.

When it reaches a boil, add dissolved gelatin and mix well. Remove from heat.

Pour jam into a clean glass pint jar and allow to cool. Place in fridge overnight to solidify.
