Kheera ka Raita (Cucumber Raita)

ingredients
all
1 medium cucumber
small dice
1 tsp cumin seeds
2 cups yogurt
plain, whole milk
2 Tbs mint
finely chopped
1 clove garlic
minced
cayenne
to taste
A cooling side dish to an Indian meal. Raita provides good-quality fat and protein to balance blood sugar and friendly bacteria for the gut.

Blot off moisture from cucumber with paper towels.

Toast cumin seeds for 15 seconds in a small, heavy pan over medium heat, or until aromatic.

In a medium bowl, stir yogurt until smooth. Stir in mint, garlic, and cumin seeds. Add cucumber and sprinkle with cayenne. Taste and adjust flavors if necessary. Chill before serving.
