Citrus Avocado Salad
ingredients
all
2 shallots
finely minced
1/4 cup champagne vinegar
2 grapefruits
2 pomegranate or blood oranges
2 mandarins or valencia oranges
zested and juiced
1/2 cup extra virgin olive oil
salt and pepper
to taste
6 cups mixed salad greens
2 cups baby arugula
2 avocados
2 lime
wedged (optional)

A cleansing diet with Citrus fruit and avocados that are high in vitamin C, which protects our cells from cancer by reducing oxidation and free radical damage.

Place shallots and vinegar in a small bowl and set aside for 20 minutes. This slightly pickles the shallots, making them less harsh in this raw salad.

Supreme grapefruits and blood oranges over a bowl to reserve juice. If using pomegranate, take out seeds by tapping sliced fruit using wooden spoon over bowl with water. This is to disregard floating stuff. Set aside supremed citrus or seeds.

To make the dressing, add mandarin juice and zest to reserved citrus juice. Season with salt and pepper. Combine with the shallots and vinegar. Whisk together while slowly pouring in olive oil. Season again with salt and pepper.

Make greens and arugula in a large bowl and toss with enough dressing to coat. Slice avocados and add to greens.

Toss in supremed citrus and/or pomegranate seeds. Drizzle extra dressing over the top, if desired.

Garnish with lime wedge.
