Veggie Baked Brown Rice
ingredients

1 large onion
small dice
1 large celery rib
medium dice
1 large carrot
julienne
2 cups kale
chiffonade
2 Tbsp virgin coconut oil
unrefined organic
sea salt and black pepper
to taste
2 cups brown rice
washed and rinsed
5 cups vegetable stock
1/4 cups fresh parsley
minced

A healthy version of your favorite fried rice. A delicious cleansing diet with a beautiful aroma and taste of coconut. Brown rice has the highest amount of B vitamins of any grain. It helps to purify the blood, expel toxins, and balance blood sugar levels.

Set the oven to 350F

In a large cast iron fillet over medium heat, warm coconut oil. Add the onion and saute for a few minutes. Season with salt. Stir in the carrots, celery and kale. Saute for about 10 minutes or until the carrot is tender. Season with salt and pepper to taste.

Add the brown rice and vegetable broth. Wait until it starts to boil. Turn off the heat and cover the skillet with foil. Place it in the oven and bake for 25-30 minutes or until rice is cooked.

Remove skillet from the oven and garnish rice with parsley.
