Chicken Fajita Salad with Honey Lime Vinaigrette

1/2 cup cilantro
2 lime
juiced
2 tsp sea salt
2 garlic clove

1 tsp cumin
1 tsp chili powder
1/4 cup olive oil
4 pcs chicken breast fillet
cut into strips
2 limes
juiced
2/3 cup cilantro
chopped
2 garlic clove

2 Tpbs honey
1/2 cup extra virgin olive oil
2 Tbs white vinegar
1 tsp sea salt
1 large yellow onion
peeled and sliced
1 large yellow bell pepper
seeds removed and thinly sliced
2 heads romaine hearts
chopped
1 avocado
sliced
3/4 cup cherry tomatoes

This is a balancing meal using lean chicken breast as a good source of protein. The cilantro gives this dish a unique edge.

Pat dry chicken with paper towels. Mix marinade (cilantro, lime, sea salt, garlic clove, cumin, chili powder and olive oil) in a medium bowl and pour over chicken. Let sit overnight in the fridge or at least 1 hour.

Prepare the dressing. Mix all ingredients in a bowl (lime, cilantro, garlic clove, honey, sea salt, white vinegar, extra virgin olive oil). Set aside.

Grill chicken. Place all salad ingredients in a serving plate. Top with chicken and avocado. Drizzle with dressing just before serving.
