Smoky Roasted Tomato + Chipotle Ketchup

1 1/2 Tbs olive oil
2 lg garlic
diced
1/2 medium yellow onion
diced
2 lbs tomatoes
ripe, chopped
2 chipotle peppers
2 Tbs adobo sauce
1 Tbs molasses
1 1/2 Tbs tomato paste
1/4 c brown sugar
1/4 c red wine vinegar
salt and pepper

In a heavy bottom pan add the olive oil, onions, garlic. Sauté until translucent.

Add the rest of the ingredients and cook on low for 20-25 minutes.

Store in 4 ounce jars.
