rachael ray's deep fried green beans

ingredients
all
1 cup sour cream
1/2 cup buttermilk
2 tsp wasabi
or adjust to taste
3 tbsp chives
salt and pepper
canola oil
1 cup water
1 cup flour
1 1/2 tsp baking powder
1 tbsp granulated onion
1 tbsp granulated garlic
2 whole eggs
beaten
1 1/2 lbs green beans
salt

  • dutch oven

We have picked up some good recipes from the few Rachael Ray episodes we've caught on TV. We liked that this dish used green beans and that buttermilk wasabi was involved, so we gave it a shot. We'd consider making this again next time we have oil already out for frying.

Combine the sour cream, buttermilk, wasabi, chives. Season with salt and pepper. Reserve.

In the dutch oven, heat a few inches of oil over medium to medium-high heat.

While the oil is coming up to temp, combine the water, flour, baking powder, onion, garlic and eggs in a bowl to form a batter.

Dip the beans in the batter, a dozen at a time. Shake off excess batter then fry them up in batches. Rest on a cooling rack. Sprinkle with salt while still hot.

Serve the fried beans with the buttermilk wasabi dip.

Consider using bread flour if you have some on hand for the batter.
