Alioli (Garlic Mayonnaise)

ingredients
all
2 cloves garlic
salt
to taste
egg yolks
1-2, depending on desired thickness
1 c olive oil
1 Tbs lemon juice
This diverse condiment be served with all kinds of meats, salt cod, black rice or paella, or a dish of potatoes and vegetables.

Crush garlic with a bit of salt to a paste in a mortar.

Transfer to a bowl and add the egg yolk/s.

Stir lightly with a whisk, and then very, very gradually whisk in the oil, a few drops at a time, until about a quarter has been added and begins to thicken and emulsify.

Whisk in remaining oil in a slow, steady stream to create a thick mayonnaise.

Add lemon juice and serve.
