1 | Blend basil, oil, lime juice, vinegar, water, and salt in a high-speed blender, until the basil is incorporated into the liquid. |
2 | Add soaked pepitas and blend again. Once complete, the mixture should be completely smooth with no visible seed or basil. |

This dressing is a staple in my home, and lasts about 5 - 7 days in the refrigerator. It makes a great topping for salads, roasted sweet potato, warm grains, fish .. and the list continues!
