Creamy Basil Lime Pepita Dressing

1 cup Fresh Basil Leaves
approximately 15 large leaves
1/4 cup Extra Virgin Olive Oil
1/4 cup Fresh Lime Juice
approximately 2 limes
2 Tbs Raw Apple Cider Vinegar
2 Tbs Water
1/4 tsp Sea Salt
1/4 cup Pepitas
soaked for at least 10 minutes, drained, and rinsed
This tangy meal topper gets it's creaminess entirely from blended pumpkin seed. Additional seeds can be used to make a thicker, more dip-like puree.
Blend basil, oil, lime juice, vinegar, water, and salt in a high-speed blender, until the basil is incorporated into the liquid.
Add soaked pepitas and blend again. Once complete, the mixture should be completely smooth with no visible seed or basil.
This dressing is a staple in my home, and lasts about 5 - 7 days in the refrigerator. It makes a great topping for salads, roasted sweet potato, warm grains, fish .. and the list continues!
