LEMON-BUTTER BLACK COD - SIBO APPROVED

1 lb Black cod
thick cut loin
1/2 lemon Lemon juice
1/4 c Dry white wine
(optional)
4 T Butter
divided (2T and 2T)
1 T Parsley
chopped
1 T Green onion
chopped
Salt
to taste
Lemon wedges
for garnish
2 tsp Asafoetida
(optional)
1/4 tsp pepper

This delicious cod is tender, moist and full of flavor. For those on a restricted diet, such as SIBO (small intestine bacterial overgrowth), it offers much needed healthy proteins with essential omega 3s. The asafoetida seasoning helps to add the allium flavor that pairs so well with fish, but which those who cannot consume garlic or onions may miss. When combined with sautéed, mixed greens (for example, spinach, kale and collards), and flavorful lentils, this dish is one that is nutritionally dense, full of antioxidants, and so tasty, no one would ever know it's SIBO-approved!

Preheat oven to 400 degrees F.

Place 2 T butter in a 7x11 baking dish, place the dish in the preheated oven until butter is melted. Remove dish from the oven.

Stir salt, asafoetida and pepper into the melted butter with a fork, until evenly distributed. Coat both sides of cod in the seasoned, melted butter, and lay the cod in the baking dish.

Bake cod in the preheated oven for ten (10) minutes.

Remove cod from oven, top with lemon juice and white wine.

Place cod back in the oven and bake until fish is opaque and flakes easily with a fork, approximately ten (10) more minutes.

Remove baked cod, separate into four (4) individual portions,* and garnish with parsley and green onion. Serve with lemon wedges.
