|Soak cashews in enough water to cover them by an inch for an hour, then drain and rinse.|
|Blend all ingredients in a high powered blender (Vitamix); a food processor also works. You need to let it blend for a full minute or more so it gets very smooth and it will get a little warm from the friction.|
|Scrape into a dish and allow to chill in the fridge before serving. It will thicken when it's chilled.|
This is a kick'n taco topping, but would also be great on a black bean burger or in a wrap. If you want to give it a 'cheesy' taste add 1 tablespoon of nutritional yeast flakes.
