These cookies do a great job of capturing the delicious essence of peanuts with each bite. Our family friend Karen bakes these delicious cookies for the holidays.
|Measure and sift dry ingredients into a mixing bowl.|
|Add oil and peanut butter to the dry ingredients. Blend in syrup and milk. Mixture will get very dense.|
|Shape into 2 rolls 1 1/2" thick then chill.|
|Slice into 1/8" thick cookies.|
|Place half of the slices on an ungreased cookie sheet.|
|Spread 1/2 teaspoon peanut butter onto each cookie, then cover with remaining slices. Seal in the edges with a fork.|
|Bake at 350°F for about 12 minutes.|
