Herbed Compound Butter

3/4 cup butter
grass-fed, room temperature
2 tsp shallots
minced
2 tsp thyme
minced
1 1/2 tsp sage
minced
1 tsp chives
minced
1 tsp rosemary
minced
1 Tbs lemon juice
Herbed compound butter has many applications; use on soups or stews, roasted meats or fish, or over an array of seasonal vegetables. Experiment with different combinations of herbs and spices to add a boost of flavor to any dish.

In a small bowl, mix softened butter with shallots, minced herbs, and lemon juice.

Spoon mixture onto a sheet of parchment or plastic wrap. Shape into a log, about 4 inches long.

Place into refrigerator until ready to use.
