Broiled Sole with Chive Butter

1 1/2 Tbs olive oil
3/4 tsp salt
3/4 tsp black pepper
freshly ground
4 lemon sole fillets
about 6 oz each and 1/2-inch thick
2 1/2 Tbs unsalted butter
3 Tbs fresh chives
minced
1 Tbs lemon juice
The simplest preparations are often the most delicious, and this especially applies to fish. This recipe showcases clean flavors by combining mild sole with bright, rich lemon butter sauce.

Spread oil over surface of baking sheet, and sprinkle with salt and pepper. Arrange fillets on baking sheet and then turn them over so they are seasoned on both sides.

Melt butter with chives in a saucepan. Mix in lemon juice. Set aside, and keep warm.

Place sole under broiler, 2–3 inches from heat source, and broil for about 2 1/2 minutes, until barely cooked.

Arrange fish on warm plates and top with chive butter. Serve immediately.
