The simplest preparations are often the most delicious, and this especially applies to fish. This recipe showcases clean flavors by combining mild sole with bright, rich lemon butter sauce.
|Spread oil over surface of baking sheet, and sprinkle with salt and pepper. Arrange fillets on baking sheet and then turn them over so they are seasoned on both sides.|
|Melt butter with chives in a saucepan. Mix in lemon juice. Set aside, and keep warm.|
|Place sole under broiler, 2–3 inches from heat source, and broil for about 2 1/2 minutes, until barely cooked.|
|Arrange fish on warm plates and top with chive butter. Serve immediately.|
