cook's illustrated easy baby bok choy

ingredients
all
1 tsp avocado oil
2 cloves garlic
pressed
1 tbsp avocado oil
8 small baby bok choy
1.5-2 ounces each, halved, washed, and spun dry
2 tbsp water
1/4 tsp salt

Combine the oil and garlic in a small container. Reserve.

Preheat the skillet over medium heat then warm the (plain) oil. Add the bok choy and water and cover immediately. Cook for about 2 minutes. Shake the pan from time to time.

Remove the lid, toss the bok choy, then push it to the perimeter of the skillet. Add the garlic/oil mixture and cook for 20 seconds or until fragrant.

Incorporate the garlic mixture into the bok choy and add the salt. Cook and stir until all the water has evaporated, about 1-2 minutes.

Plate and serve immediately.
