Morning Zen Cherry Pecan Granola

ingredients
all
6 cups rolled oats
1 cup sesame seeds
1 cup golden flax seeds
ground
1 cup sunflower seeds
2 cups coconut
large flaked, unsweetened
2 cups pecan halves
1/2 cup coconut oil
melted
1/2 cup sunflower oil
or organic canola
1 cup honey
or pure maple syrup or a combination of the two
2 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla

Use this recipe loosely. You can substitute different nuts and seeds and even try other rolled and flaked grain combinations. If you end up adding more dry ingredients, just increase the honey and oil to coat everything.

preheat oven to 350

dump everything into a large mixing bowl and stir to coat all the dry ingredients with the honey and oil.

spread the mixture evenly across two large sheet pans

bake for about 15 min. and then use a spatula to stir and turn around the mixture so it will toast evenly. (it tends to get darker around the edges) Check every 5 min. from this point on stirring and toasting until the granola is evenly browned. It will still look soft, but will get crunchy when it cools.

remove from oven and allow to cool completely before transferring to an airtight container.
