Multigrain pancakes
ingredients
all
3/4 cup quinoa
1/2 cup oats
1 Tbs. Golden Flaxseed
1/2 cup cornmeal
1 Tbs. Chia seeds
2 tsp. baking powder
1/4 tsp. salt
1 .75 cups almond milk
unsweetened
1 tsp. vanilla
2 Tbs. pure maple syrup
zest from one lemon
1 cup blueberries
This is a hearty pancake with flax and chia adding a nice crunch. This recipe makes 18 large pancakes and they freeze well for a quick fix on a busy morning.

add quinoa to pitcher of blender and pulse until ground

add oats and flax and pulse again until oats are coarsely ground

add cornmeal, chia seeds, baking powder and salt, pulse to combine

add liquid ingredients, bananas and lemon zest, pulse until batter is smooth.

cook pancakes on a griddle with a little coconut oil, dropping in blueberries as you go.

serve hot with a little pure maple syrup and more fruit.
