This is a hearty pancake with flax and chia adding a nice crunch. This recipe makes 18 large pancakes and they freeze well for a quick fix on a busy morning.
|add quinoa to pitcher of blender and pulse until ground|
|add oats and flax and pulse again until oats are coarsely ground|
|add cornmeal, chia seeds, baking powder and salt, pulse to combine|
|add liquid ingredients, bananas and lemon zest, pulse until batter is smooth.|
|cook pancakes on a griddle with a little coconut oil, dropping in blueberries as you go.|
|serve hot with a little pure maple syrup and more fruit.|
