Chocolate Chip Cookies (Vegan)

1 Tbs Chia seeds
can grind in spice grinder, food processor or mortar and pestle
3 Tbs Water
1 cup Almond flour
blanched
1/4 cup Coconut flour
1 tsp Baking soda
1/4 tsp Salt
6 Tbs Natural nut butter
6 Tbs Coconut oil
3/4 cup Coconut sugar
1 1/2 tsp Vanilla extract
1 cup Chocolate chips
dark chocolate

  • Hand mixer or food processor
Delicious chocolate chip cookies using chia seeds instead of eggs! This is vegan, dairy free, gluten free and refined sugar free.

Preheat oven to 350F.

Mix chia seeds and water in a small bowl. Set aside for at least 15 minutes.

In a medium bowl, mix almond flour, coconut flour, baking soda and salt. Set aside.

In a large mixing bowl with electric hand mixer or in a food processor, beat together coconut oil and coconut sugar at medium speed until well combined and creamy in consistency. Then add nut butter and vanilla extract and continue to mix.

At a low speed, mix in chia mixture. Then transfer dry ingredients by batch to wet ingredients until well incorporated. Using a spatula, fold in chocolate chips. Get 2 Tbs of mixture and form into a ball.

Line baking sheet with parchment paper. Put cookies and lay flat with a fork. Bake for 14-17 minutes. Cool and serve.
