We first had this cocktail at Curio in Chicago, then later learned that it is a classic cocktail that was named after the South Side area in Chicago. How fitting to have first tasted it there! This cocktail typically comes to mind when we have fresh mint on hand. Because it tastes so refreshing, the South Side also comes to mind when the weather is hot.
|Add the mint and lemon into an ice-filled cocktail shaker. Muddle the mint to break it up.|
|Add the gin and agave syrup to taste, then shake to combine and chill.|
|Add the egg white if using, then shake again.|
|Double strain into serving glass. Garnish with mint.|
