roasted broccolini with lemon and parmesan

ingredients
all
1 whole lemon
halved with seeds removed
4 cloves garlic
crushed
1 lb broccolini
about 2 bunches, well-dried (with salad spinner or paper towels) and bottoms trimmed
3 tbsp olive oil
salt
pepper
1/2 cup Parmesan cheese
flaked or finely grated

Preheat the oven to 425°F. Set the oven rack to the middle position.

While the oven preheats, process the lemon and veggies. Cut one of the lemon halves into thin rounds (save the other half for juicing later). Peel and crush the garlic. Halve the broccolini lengthwise through the stem. Quarter any particularly thick stems so that the broccolini sticks are about the same size.

In the rimmed baking sheet, combine and toss the lemon rounds, garlic, broccolini, olive oil, salt, and pepper until evenly coated.

Sprinkle the Parmesan over the seasoned broccolini. Roast for 10 minutes.

Flip the broccolini and roast for another 5-10 minutes or until the broccolini is charred.

Squeeze the other lemon half over the broccolini then plate and serve.
