kimchi hot dog
1/2 cup kimchi
2 tsp honey
2 tsp rice vinegar
4 whole hot dogs
4 whole hot dog rolls
splurge on brioche hot dog rolls if you can find them
4 tbsp korean hot mustard
Making use of Korean "accessories," this recipe is a fun take on the hot dog. It kind of reminds us of the kimchi hot dog you can get over at the PDT speakeasy in NYC. Be careful not to go overboard with the Korean hot mustard. It really packs a kick! Adapted from Marja Vongerichten's Kimchi Chronicles.
Preheat the cast iron griddle to high heat.
In a small bowl, combine the kimchi, honey, and vinegar.
Grill the hot dogs until browned and crispy; lightly grill the rolls until golden brown.
Transfer each hot dog to a roll and top with mustard and kimchi relish.
