I love that Jacques Pepin gleaned this recipe from Dr. Taco in Playa del Carmen in Mexico. This is a really quick and easy dish to make, especially if you have extra shrimp on hand. We made ours with a brioche slider bun, but whichever type of bun you prefer would work for this recipe. Adapted from Jacques Pepin's Fast Food My Way.

Lay the cheese slices inside the skillet, then warm the skillet over medium heat.

Once the cheese starts to melt, add the shrimp, salsa, and scallions. Cover and cook for a few minutes.

Split and toast the brioche bun, then transfer the shrimp burger onto the bottom half of the bun. Top with lettuce, tomato, and the top of the bun.
