1 | In a large bowl, mix vinegar, hot sauce, oil, garlic and pepper. |
2 | Peel, pit and cut avocado into 1/2 inch cubes. Salt, then add to the vinegar mixture and mix gently to coat. |
3 | Rinse and drain the black-eyed peas and corn, then add to the bowl. |
4 | Add green onions, cilantro and tomatoes to the bowl and mix gently to coat. |
5 | Add salt to taste. |
6 | Serve cowboy caviar with chips. |
