cowboy caviar
ingredients
all
2 tbsp red wine vinegar
2 tsp hot sauce
or more to taste, use taco sauce if you have it on hand
1 1/2 tsp salad oil
1 clove garlic
minced
1/4 tsp pepper
1 whole avocado
about 10 ounces, ripe, but not too soft
salt
1 can black-eyed peas
about 15 ounces
1 1/2 cups frozen corn
defrosted and drained
2/3 cup green onions
thinly sliced
2/3 cup cilantro
chopped
1/2 lb tomatoes
salt
tortilla chips

This simple, healthy appetizer is always a hit at parties!

In a large bowl, mix vinegar, hot sauce, oil, garlic and pepper.

Peel, pit and cut avocado into 1/2 inch cubes. Salt, then add to the vinegar mixture and mix gently to coat.

Rinse and drain the black-eyed peas and corn, then add to the bowl.

Add green onions, cilantro and tomatoes to the bowl and mix gently to coat.

Add salt to taste.

Serve cowboy caviar with chips.
