1/3 cup water
1 packet knox gelatin
substitute with vegan alternate to make recipe vegetarian
1 pint whipping cream
3/4 cup sugar
1 1/2 cup sour cream
1 tsp vanilla
fresh mint
My mother-in-law's recipe for panna cotta is super easy to make and serves as the perfect backdrop for fresh berries. This dessert is rich, subtle, and balanced. Since it needs to be chilled overnight, it can be prepared in advanced and makes for an easy dessert for company. This recipe is always a crowd pleaser at parties.
Soften the gelatin in water, then warm in the microwave to dissolve. Reserve.
Heat the whipping cream in a sauce pan over medium-low heat until the cream is warm, but not hot or boiling. Add the sugar and gently whisk to dissolve. Combine the gelatin solution with the saucepan contents. Remove the saucepan from heat and cool for about 5 minutes.
In a large bowl, combine the sour cream with the cooled cream mixture. Beat with a whisk and add vanilla. Pour into a jello mold or equivalent, cover, and chill overnight.
Top with berries and mint before serving.
