1 | Soften the gelatin in water, then warm in the microwave to dissolve. Reserve. |
2 | Heat the whipping cream in a sauce pan over medium-low heat until the cream is warm, but not hot or boiling. Add the sugar and gently whisk to dissolve. Combine the gelatin solution with the saucepan contents. Remove the saucepan from heat and cool for about 5 minutes. |
3 | In a large bowl, combine the sour cream with the cooled cream mixture. Beat with a whisk and add vanilla. Pour into a jello mold or equivalent, cover, and chill overnight. |
4 | Top with berries and mint before serving. |
