Ingredients
 salt1 tsp
 red wine vinegar3 tbsp
 balsalmic vinegar1 tbsp
 olive oil 1/3 cup
 watermelon
chilled and sliced into chunks (this salad is delicious when the watermelon is cold)
 tomato1 half
seeded and diced small
 goat cheese
 pistachio
 mint
rolled together then sliced thin
 microgreens

Prepare the dressing by dissolving the salt into the vinegars. Whisk in the olive oil, then reserve.

Slice the watermelon and plate it.

Dice the tomato into small cubes and sprinkle it over the watermelon. Dress the salad at this point.

Top the salad with goat cheese, pistachio, mint, and microgreens. Enjoy immediately.
