This is a simple meal that we often make with leftover meat, but we are including here our simple steps for tostada meat in case you need to whip it up. We simply warm some black beans, reheat the meat, prep the fresh ingredients, and then we each assemble our own tostadas.
for the meat

Preheat the oil in the sauté pan over medium heat. When the oil is warm, add the onions. Cook for about 3 minutes or until translucent.

Add the garlic, stir briefly, then add the ground beef. Break up and stir the meat for about 5 minutes or until all the pink is gone.

Drain off excess fat from the meat, then add the meat back to the sauté pan.

Add the taco seasoning. Stir to coat and cook for 1 to 2 minutes. Add water and stir again to blend. Cover and cook for about about 5 more minutes until the sauce has thickened.
for the beans

Preheat the olive oil in a 10-inch skillet over medium heat. Stir in the garlic and cook for 1 minute. Add the beans and their liquid with the salt. When the beans simmer, mash them into a smooth paste with a potato masher. Cook, stirring constantly, until it's the consistency of very soft mashed potatoes, about 10 minutes. Cover and reserve so that the beans stay soft and moist.
to assemble

On the tostada shell, pile on the beans, avocado, meat, lettuce, cilantro, tomatoes, sour cream, and hot sauce.

Finish with a squeeze of lime and then enjoy immediately.
notes
The leftover meat we use varies for this recipe. Sometimes we use leftover taco meat, but sometimes we also warm up chicken breast that we've carved from a Costco rotisserie chicken.
